She has done almost everything to fit her snugly into this list; she was in three nerd-cred iconic roles: Alice in Swamp Thing, Selina Kyle/Catwoman in the animated Batman series and animated Gotham Girls, and of course Maggie in Escape from New York.
She's a prolific actress, whose ability to work has not diminished with age to the degree of her compatriots (IMDb shows she is currently in production on two films). Her only real competition is from Pam Grier. Here are some of her highlights:

There were only three reasons to sit through The Cannonball Run, and Captain Chaos was none of them :-D
She also popped up on an episode of "Dexter" and had a hilarious part on "The New Adventures of Old Christine".
Barbeau is the lady.
I have not seen that episode of Dexter. I do want to read her autobiography, but I am really bad about reading those. I need to download the sample on my Kindle and see what it is like.
I read it at the library, I thought it was very good.
She plays a great bitch, too. She was perfect in Back to School as Rodney's wife. I had a crush on her when I saw Swamp Thing, for obvious reasons.

@TS - I completely forgot about her in Back to School. Yeah, her character was terrible, and she pulled it off perfectly.
She proved that she still was still hot on Carnivale. I have enjoyed watching her ever since first seeing her on Maude and she was the real reason that I watched the show.
I LOVE Escape from New York. It's one of my guilty pleasures.

Cannibal Women in the Avocado Jungle of Death? YES! I LOVE THAT MOVIE, especially Shannon Tweed, though it's Adrienne Barbeau's name I invoke on a foggy morning and have for years and years, mostly to the confusion of people around me.
Barbeau even shines in a goofy little DTV western flick called GHOST ROCK, where a cowhand challenges Barbeau to hit him. You can guess the result.
